Strawberry pistachio smoothie

Ingredients
1 1/2 cup flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 1/3 cup milk
- 1 egg
- 1/2 teaspoon almond extract
- 1 cup cherries
Instructions
- Preheat the oven to 400 degrees F.
- Prepare a muffin tin by lining it with cupcake or muffin paper liners.
- In a medium bowl, add 1 1/2 cup flour, 3/4 cup sugar, 2 teaspoons baking powder, and 1/2 teaspoon of salt. Mix until fully combined.
- In a separate bowl, add 1/3 cup vegetable oil, 1/3 cup milk, 1 egg, and 1/2 teaspoon
almond extract. Using a whisk or fork, whisk together until fully combined.
- Pour the liquid ingredients into the dry ingredients and mix together until fully incorporated.
- Measure out 1 cup of cherries and wash.
- Using a straw or your fingers, remove the pits from the cherries.
- Cut the cherries in small pieces and add to the bowl.
- Stir in the cherries.
- Spoon batter into the muffin tin. Fill each about 2/3 of the way up.
- Sprinkle extra sugar and a small amount of cinnamon on top.
- Bake the muffins for about 20 minutes.
- Allow to cool, then remove and transfer to a wire rack or plate.
